TL;DR version below

As the title says, I'm new to 3d printing and have no idea what I'm doing. I just set up my new Longer LK5 Pro 3. Everything went well and the bed is level. My very first print was the whistle included on the micro SD card that came with the printer. It printed very well, except for the fact that it was stuck to the build plate so tightly I thought I was going to have to order a new plate.
I sprayed around it with 50/50 isopropyl alcohol & water and let it sit over night. This morning it was still fused to the plate, so I removed the plate and placed it on a small ice pack under the print. After about 20 minutes I was able to get a thin scraper under one edge and work it off.
It didn't print on a raft, and there was no skirt.
With all of that being said, where do I go to start learning what all of the settings do? Where can I look to figure out why that first print nearly became a permanent part of the build plate?

TL;DR...Where does a newbie who knows absolutely nothing start?

This was a really good start, coming to a forum where maybe someone who could held you.
However am as new to printing on the stainless steel flexible beds as you are.
Having the same problems either it sticks too well or it just will not stick and ends up a mess all over the bed.

Though do have almost 9 years of printing. So maybe I can figure it out but for now we are in the same boat so to speak.
