If you want professional quality, you'll want to consider quality equipment. Anycubic certainly isnt that.
Id look at machines like the Bambu Labs, Prusa or Ultimaker

I've become a fan of the Reddit groups, so you might start there. Or the Facebook group if you have social media
You could also check the Anycubic site and I believe they offer some level of support, so you could check there for the stock or latest version of the firmware for that model

I'd do some PID Autotune testing of your hot end, just to see if it is struggling to maintain temp

Have you checked the tensioner? Clicking sounds like there's an issue moving the filament. Where is the clicking? I would imagine from the extruder having difficulty pushing the material. Is the hobbed gear set screw firmly in place, holding it to the extruder motor? Is it in good condition? Not a g...

First, I wouldn't leave a printer running overnight un-monitored for situations just like that. Heck, they thing could've caught fire!
